It’s Veganuary and let’s try another delicious vegan recipe.
Recipe is for 3 persons
- 500 g Potatoes
- 200 g Fresh Vegetable of your choice (zucchini, carrots, pumpkin)
- 1 Onion
- 1 clove garlic (if you like)
- 1-2 Tsp Curry mustard
- Salt & Pepper
- Some nutmeg
- Fresh or dried herbs
- Sunflower Oil
- Tbsp. Flour (if needed)
Peel the potatoes and vegetable and grate it in small pieces.
Let it sit for a while. You see that water will settle. Take a handful of the vegetable and press the juice out. Heat a frying pan with Sunflower oil.
Add the seasoning, the mustard and perhaps some flour (to bind the liquid). When the oil is hot, add 2 tablespoon of vegetable in the pan for one patty. Repeat till the pan is full. Make sure there is always enough Oil in the pan. Turn the patties. When they are brown from both sides, they are ready.
The patties are very delicious with a relish and some salad on the side. When I have sprouts, I add some for some crunchiness. The potatoes and vegetable can be exchanged with everything you like.
